Matsumoto Sake Brewing was founded in 1791 along the Takase River in Fushimi, Kyoto, one of Japan's great brewing districts, and the Sawaya Matsumoto brand combines the original business name Sawaya with the founding family's surname. The brewery's guiding philosophy is Shuhari (Preserve, Break, Leave), embracing innovation within a framework of two centuries of Kyoto brewing tradition, with a core belief that there is no technique that surpasses the ingredients. Premium rice varieties are paired with pristine groundwater drawn from beneath the Momoyama Hills, and most of the process is completed by hand to preserve the integrity of each grain.
