The Shuhari series from Matsumoto Sake Brewing in Fushimi, Kyoto, takes its name from the ancient principle of shu (preserve tradition), ha (break from it), and ri (transcend both). Founded in 1791 along the Takase River, the brewery applies this philosophy through its defining experiment: brewing with different rice varieties from the same soft Fushimi well water to reveal how profoundly rice cultivar shapes character. This expression carries a natural light effervescence that has become a Shuhari signature, alongside clean, fragrant fruit and a rounded softness drawn from Fushimi's legendary groundwater.
