Kinshimasamune

Founded in 1781 in central Kyoto by Matsuya Kyubei, Kinshimasamune relocated to the Fushimi district in 1880 to take advantage of its celebrated groundwater, and the on-site Tokiwa Well, now recognized among Japan's 100 most famous wells, continues to supply the brewery at a rate of 70 tons per hour. The brand adopted the golden eagle (kintai) as its trademark in 1896 and pioneered paper-pack sake commercialization in Japan in 1977. Today the brewery brews under the slogan Kyo-shikomi (brewed in Kyoto), and its tokubetsu junmai won the platinum prize at Kura Master 2023.
