Katsuyama was established in 1688 as the official sake brewery of the Date Clan of Sendai, and remains the only designated supplier of sake to the Date family today. Brewing just one tank per week rather than the industry norm of seven, the brewery pursues extraordinary purity through centrifuge pressing, sourcing water from an aquifer that rises at Izumigaoka and irrigates the surrounding rice fields.
