Kamihe

Kamihei Shuzo is the sole sake brewery in Tono City, Iwate Prefecture, with origins dating to 1789 when its predecessor produced doburoku before transitioning to authentic sake in 1845. The brewery is the second oldest in Iwate and has inherited the techniques of Nanbu Toji, the largest and most historically significant master brewer lineage in Japan, rooted in Iwate. Pure underground water flowing from Mount Hayachine feeds the brewing process, and since 2020 the brewery has grown its own sake rice on-site, controlling production from field to bottle.
