Collected via the shizuku drip method, in which bagged moromi releases sake drop by drop without mechanical pressing, this daiginjo from Kamihei Shuzo in Tono, Iwate represents the brewery's highest-tier expression. Soft mountain spring water and cool northern climate conditions in Iwate provide the environment for slow, low-temperature fermentation.
