Yamaguchi & Co. is based in Aizuwakamatsu, Fukushima Prefecture, with brewery roots extending back to 1643, making it one of Aizu's most historically significant sake producers. The Kaishuichi name translates as the finest sake in Aizu, a title the brewery earned during the Edo period when it served as purveyor to the lords of the Aizu domain. After a period of suspension, the brewery reopened in 2007 in a modernized facility, and has since pursued locally sourced rice and Fukushima's signature yeast strains including the Utsukushima Dream Yeast, which was sent aboard a space mission and used upon its return.
