Joppari

Founded in 1719 in the castle town of Hirosaki, Aomori Prefecture, Rokka Shuzo brews the Joppari brand using rice grown in Aomori and groundwater from the Shirakami mountain range, a UNESCO World Heritage site. Joppari means stubborn in the Tsugaru dialect, and the name reflects the brewery's deliberate decision to buck the sweet sake trend once dominant in Tohoku and instead produce a distinctly dry, assertively flavored sake.
