Founded in 1830 in Yaizu, Shizuoka Prefecture, Isojiman Shuzo is regarded as one of the definitive expressions of the Shizuoka style of ginjo brewing, which centers on the prefecture's original yeast strains to produce clean, gently fruity sake. The brewery sources its rice exclusively from a single production area in Kato City, Hyogo Prefecture, with a further refinement since 2010 to draw only from three specific districts within that area. Isojiman was selected as the toast sake at the 2008 G8 Hokkaido Toyako Summit, bringing the brand to international attention.
