Fukui Yahei Shoten was founded during the Kan'en era of the mid-Edo period and has been brewing sake in Takashima City, Shiga Prefecture, on the western shore of Lake Biwa, for over 270 years. The Haginotsuyu name, meaning dew on bush clover, was given by the feudal lord at the brewery's founding in reference to the bush clovers that grow along the lake's shoreline. Brewed with Omi sake rice and soft water from the Mt. Hira range, and guided by the philosophy Sake to savor, not to get drunk, Haginotsuyu has won a gold medal at the National New Sake Tasting Competition and a Platinum at the Kura Master competition.
