Haginotsuyu Junmai Ginjo Kaze Yamadanishiki Muroka Genshu from Fukui Yahei Shoten in Takashima, Shiga, uses Yamada Nishiki at 60% polish and is bottled unfiltered and undiluted for a full-intensity expression of this over-270-year-old Lake Biwa shore brewery. Brewed with naturally soft water from Mt. Hira by a brewery whose guiding philosophy is sake to savor rather than to intoxicate, this muroka genshu delivers the complete natural depth of the rice without filtration or dilution.
