Haginotsuyu Junmai Ginjo Namazake from Fukui Yahei Shoten in Takashima, Shiga, is an unpasteurized expression using rice polished to 60% with naturally soft Mt. Hira mountain water from this brewery founded in the Kan'en era (1748 to 1751). Guided by a philosophy of sake to savor rather than simply consume, and drawing on over 270 years of continuous brewing between Lake Biwa and the Hira Mountains, it delivers a vivid, fresh namazake character with the quiet elegance that defines the Haginotsuyu house style.
