Description

Haginotsuyu Junmai Ginjo Namazake from Fukui Yahei Shoten in Takashima, Shiga, is an unpasteurized expression using rice polished to 60% with naturally soft Mt. Hira mountain water from this brewery founded in the Kan'en era (1748 to 1751). Guided by a philosophy of sake to savor rather than simply consume, and drawing on over 270 years of continuous brewing between Lake Biwa and the Hira Mountains, it delivers a vivid, fresh namazake character with the quiet elegance that defines the Haginotsuyu house style.

Shiga
It has been more than 260 years since its founding. Underground sake brewing in Omi Takashima is a line. The mellow, tasty, and sharp sake that makes use of the flavor of rice and the softness of water is unique.
