Description

Haginotsuyu (Dew on Japanese Bush Clover) Daiginjo from Fukui Yahei Shoten in Takashima, Shiga, comes from a brewery founded in the Kan'en era (1748 to 1751) of the Edo period, whose name was bestowed by the feudal domain lord in reference to the bush clover blooming along Lake Biwa's shores. Situated between the lake and Mt. Hira, the brewery uses naturally soft water from the Hira Mountain range and Yamada Nishiki rice for an elegantly composed daiginjo from one of Shiga's oldest sake producers.
