Fukuiwai is produced by Tohei Shuzo Corp. (Fujihei Shuzo) in Kimitsu City, Chiba Prefecture, a small brewery of roughly 300 koku founded in 1716 and now run by three brothers. Brewed with the famously mineral-rich Kururi no Meisui spring water and a range of carefully selected sake rices, the brand has earned seven gold prizes at the National New Sake Competition, expressing its name, meaning blessed celebration, in a lineup with precise acidity and a clean, dry finish.
