Dogokurazake

Minakuchi Shuzo, founded in 1895, operates directly beside the ancient Dogo Onsen in Matsuyama City, Ehime Prefecture, making it the only brewery in Japan's oldest documented hot spring district. The brewery uses locally grown rice and soft underground water filtered through Mount Ishizuchi, Shikoku's highest peak, to brew sake under the Dogokurazake brand alongside a range of craft spirits and ales that reflect the resort town's cosmopolitan character. Its sake lineup spans traditional junmai expressions to aperitif-style products designed for contemporary food pairings.
