Daishichi Sake Brewery was founded in 1752 in Nihonmatsu, Fukushima Prefecture, and has pursued kimoto brewing exclusively for nearly three centuries, believing its labor-intensive method yields depth and richness that no modern shortcut can replicate. Now in its tenth generation, the brewery developed a proprietary ultra-flat rice polishing technique to extract maximum purity from its raw materials. Flagship labels including Junmai Kimoto, Minowamon, and Myoukarankyoku have earned the brewery international recognition alongside domestic acclaim.
