Chigonoiwa Syuzo was founded in 1909 in Toki City, Gifu Prefecture, a region historically significant for its pottery industry, where thick clay soil produces exceptionally soft groundwater that lends itself naturally to brewing delicate, refreshing sake. The brewery has passed its techniques through four generations, producing a mellow local sake that reflects the quiet, refined character of its Gifu surroundings.
