Akebono
Akebono Shuzo was founded in 1904 in Aizusakashita, Fukushima, and is recognized in the region as a brewery that has had women serving as head brewers across three consecutive generations, a rare distinction in an industry historically dominated by men. The brewery tends its sake as it would a living thing, listening to the rice and allowing the yeast's natural vitality to guide fermentation, a philosophy expressed most fully in its premium Tenmei brand. Tenmei, meaning the first light before dawn, is the label that has brought Akebono Shuzo its widest recognition outside Fukushima, while the Akebono label remains a beloved local staple in Aizu.
