岐阜縣
岩村釀造創立於1787年(江戶時代天明七年),位於岐阜縣恵那市岩村町。創業之初,經營酒藏的渡會家族以岩村城年貢進納的米為原料開始釀造日本酒。1923年在設立岩村町第二家株式會社的同時,也開始同步生產味噌和醬油,因此公司名為「釀造」而非「酒造」。此後味噌醬油業務停止,專注於酒藏至今。酒藏堅持釀造真正意義上的地域日本酒,原料米在當地種植,釀造用水則採自約400年前挖掘的古井,與栽培原料米所用水質相同。在杜氏的手工技藝下,秉承創業以來「怜楼馥郁」的釀造信條,始終追求與時代相符的日本酒,持續進化。
