An unfiltered junmai daiginjo genshu labeled 'Rashinban' (compass), made with Yuki Megami at 33% polishing and aged at ice-cold temperatures before a single-fire release. Soft sweetness and a sharp acidity come together in a richly aromatic, elegant sake that won gold at the 2024 Wine Glass Delicious Sake Award in the Premium Daiginjo category.
