Honjouzou Wakamidori Kakudaru from Iiyama Shuzo in Nagano is a honjozo stored and served in a traditional square cedar cask (kakudaru), which imparts the distinctive woody, resinous aroma of Japanese cedar (sugi) to the sake. The Wakamidori (young green) brand evokes freshness and vitality, and the cedar-cask format adds an aromatic dimension rarely encountered in modern sake outside of traditional settings such as festivals and ceremonial occasions.
