Hakuyocho Fukurotori (袋取り) Junmai Ginjo uses the bag-pressing method, allowing sake to drip by gravity without applied pressure, from Ebara Shuzo Honten in Kotouramachi, Tottori. Founded in 1893 at the foot of Mount Daisen with Chugoku Mountain aquifer water, this free-run pressing technique extracts the most refined, delicate portion of the pressing.
