Description

自古以來,酒的熟成——即歲月的滋味,令人心馳神往。葡萄酒與威士忌中早已普及的年份概念,在日本酒領域尚未廣泛滲透。懷著「以時間為飲法來享受」的心願,自2010年起開始致力於熟成釀造。為尋求能夠經受長期熟成的酒款,同時作為新的挑戰,選擇了山廢仕込。自2013年起不再添加培育酵母,改用天然酵母。用「那一年」的水、米、酵母,懷著對「那一年」的思念釀造而成。若能品味每個年份、各有不同的風情,將是我們莫大的欣慰。商品名「琥刻」,承載著這片湖畔土地與人們所釀之酒,經歲月雕刻而愈加深沉,如琥珀般……
