Japanese Green Onion Pancake

If you have a bunch of green onions sitting in the fridge, this recipe is one you'll want to make again and again. With just a few everyday ingredients, you can turn them into a crispy, savory pancake that's incredibly satisfying.

As the green onions cook, their sharp flavor mellows into a natural sweetness, while the outside becomes beautifully golden and crisp. Enjoy it with your favorite sauce and mayonnaise, or customize it with pork belly, tempura flakes, or cheese for an even heartier version.

What you'll need

  • 1 Japanese long green onion (negi)
  • 2 tsp Japanese dashi powder
  • 3 tbsp all purpose flour
  • 1 tbsp potato starch
  • 3 tbsp water
  • 1 large egg
  • 2 tsp neutral cooking oil

  • Okonomiyaki sauce, to taste
  • Japanese mayonnaise, to taste
  • Bonito flakes, to taste
  • Sliced green onions, to taste

How to make it

Step 1

Thinly slice the Japanese green onion on a diagonal. Place it in a bowl with the dashi powder and let it sit for about 5 minutes until slightly softened. Add the flour, potato starch, water, and egg, then mix well until the batter becomes slightly sticky.

Tips

  • Letting the green onions sit with the dashi powder before mixing helps draw out their natural sweetness and softens their texture.
  • Cook slowly over medium low heat so the center cooks through while the outside develops a crisp, golden crust.
  • Try adding sliced pork belly, tempura flakes, cheese, or shrimp for a heartier variation.
