O Miyama Nishiki polido a 55% é produzido no inverno, depois armazenado e lentamente envelhecido durante os meses mais quentes até o outono, o processo akiagari que suaviza e integra os sabores. O formato genshu não diluído concentra o umami bem equilibrado e acrescenta corpo, com um acabamento composto e limpo que combina bem com a culinária outonal. A água subterrânea de nascente de Zao fornece a base suave.
