Takakiya Junmai Daiginjo Yamadanishiki apresenta o arroz para sake mais celebrado do Japão, o Yamadanishiki, processado em padrões daiginjo pela operação totalmente artesanal da Hamashima Shuzo em Bungo-Ono, Oita. A cervejaria, que retomou as operações em 1997 sob a liderança direta do mestre cervejeiro, cultiva múltiplas variedades de arroz em seus 13 hectares de terras agrícolas, trazendo um rigoroso controle agrícola a esta expressão de prestígio. O alto polimento e a fermentação lenta extraem os aromáticos limpos de melão e flor pelos quais o daiginjo à base de Yamadanishiki é renomado.
