A linhagem Shiragiku foi resgatada a partir de apenas 55 sementes ao longo de uma década, tornando-o um dos arrozes para sake mais raros do mundo. O sake resultante apresenta caráter doce e arredondado, com acidez vibrante e boa estrutura.
