O ginjo da Kuramitsu Shuzo é elaborado na única cervejaria de sake remanescente em Oita City, utilizando água subterrânea do Rio Ono em combinação com o fermento de alto éster da cervejaria. Fundada em 1864, a cervejaria aplica métodos artesanais cuidadosos em toda a sua linha de ginjo para alcançar um estilo fragante e limpo.
