O Shinsei Iwai Junmai Daiginjo utiliza o célebre arroz Iwai de Kyoto, uma variedade registrada em 1951 e cultivável apenas na Prefeitura de Kyoto, polido para uma expressão junmai daiginjo desta histórica cervejaria de Fushimi. Os grandes grãos de Iwai, com proeminentes centros brancos, são bem adequados à produção de alto polimento, e o sake resultante exibe frescor frutado ao lado do umami natural do arroz. Elaborado com a suave água da nascente Shiragiku de Fushimi, conquistou duas medalhas de ouro consecutivas no Kura Master na divisão junmai daiginjo.
