Mikotsuru Sakemirai Junmai Ginjo é fermentado na Suwa Mikotsuru Shuzojo em Shimosuwa, Nagano, usando o Sakemirai, uma variedade de arroz para sake desenvolvida na Prefeitura de Nagano e lançada por volta de 2015 para se adequar ao clima alpino frio. O polimento ginjo de pelo menos 60% e a fermentação em temperatura controlada da cervejaria produzem um perfil limpo e aromático. Os invernos frios de Nagano e a água suave das montanhas contribuem para o caráter delicado e acessível desta expressão.
