A cervejaria aplica controle preciso de temperatura durante a fermentação, buscando qualidade reprodutível por rigor científico, não apenas pela intuição. Esta safra de 2014 reflete a tradição regional de Nagano de sake suave e limpo, sustentado pela água pura do degelo das montanhas.
