Produzido com koji elaborado em câmara quente e úmida, resultando em um sake com sabor e complexidade únicos da Kozaemon. Aromas de damasco seco, passas e mel. Umami e acidez intensos que envolvem o paladar. Em 2021, foi utilizado na criação de chocolates pela Patisserie Sadaharu Aoki Paris.
