O Junmai da série Sanshu da Kawatsuru utiliza arroz Yamadanishiki polido a 65%, engarrafado não filtrado (muroka), não pasteurizado e não diluído (namagenshu) para preservar o máximo de frescor. O Yamadanishiki, cultivado no clima quente do oeste do Japão, combina naturalmente com o cenário do Mar Interior de Seto de Kagawa, entregando o corpo pleno característico da variedade, o umami fino e a estrutura limpa em forma crua e vibrante.
