Junmai Daiginjo Nishingoten da Kitanohomare Shuzo, em Hokkaido, tira seu nome das grandes mansões do arenque (nishin goten) que pontuavam a costa de Hokkaido durante o auge da pesca de arenque no século XIX. Como junmai daiginjo, o arroz é polido a pelo menos 50% antes da fermentação, produzindo um sake de pureza excepcional e aromáticos refinados. O clima frio de Hokkaido e a água limpa sustentam a fermentação precisa exigida nessa categoria de alto nível.
