Arroz Omachi de Bizen, polido a 55%, é fermentado pelo método yamahai na Uehara Shuzo com fermento selvagem cultivado internamente e prensado pelo método kioke tenbin. A variedade Omachi contribui com doçura suave e arredondada e umami rico, enquanto a fermentação yamahai acrescenta complexidade profunda e um pronunciado caráter lático. Engarrafado como muroka namagenshu, sem filtragem, pasteurização ou diluição.
