O clássico Blue Door é um junmai namazake. Pensado para ser servido localmente, gelado e apreciado logo após o fim do processo de fermentação. Utiliza uma mistura de arroz calrose e yamada nishiki polidos a mais de 70%, fermentado a uma temperatura ligeiramente mais alta do que os ginjos. O resultado é um sake encorpado, terroso, seco e rico em umami, com notas sutis de banana e melão maduro.
