O Junmai Ginjo da Azakura Shuzo utiliza Misato Nishiki, um arroz para sake de origem akitana polido a 50%, engarrafado sem filtração ou diluição como muroka genshu para preservar o caráter de plena potência e a complexidade natural. Usando o fermento Yukiguni UT-2 de Akita junto ao arroz desenvolvido localmente, a cervejaria cria sake com aroma contido, acidez limpa e excelente equilíbrio.
