Batizado pelo ensaísta Itoi Shigesato e elaborado com Yamada Nishiki cultivado em Yoshikawa, polido ao mínimo de 90%, pelo método de agricultura natural Nagata, que produz arroz com baixo teor de proteína e alto teor de amido. Apesar do polimento quase integral do grão, o sake oferece aromas de banana e baunilha, doçura profunda de arroz e um final limpo com acidez firme.
