Description

A daiginjo brewed with locally grown Dewa Sansan rice from the Haguro area of Yamagata, using deep-layer subterranean water from Mt. Gassan. The brewery's daiginjo lineup using Dewa Sansan earned six consecutive Gold Prizes at the National New Sake Appraisal and holds a five-year consecutive gold record in the regional rice category, cited as a national record. The house style aims for layered umami driven by alanine and glutamine amino acid development rather than simple sweetness.
