Named after the historic Yoshinoya sake shop that long carried this cellar's products, this tokubetsu junmai is brewed with Hida Homare polished to 55% at Yamadashoten in Yaotsu, Gifu. Low-temperature brewing draws out a gentle melon-like fragrance alongside a rich rice sweetness with clean, moderate acidity.
