Wagauji Yama no Itadaki is a junmai ginjo polished to 55% from Miyama Nishiki, released as a hiyaoroshi after summer storage at the Tsuruoka brewery. The six-month low-temperature aging softens the variety's natural acidity, integrating sweetness and umami into a rounded, mellow autumn sake.
