Hattan 35 and Matsuyama Mii rice, both polished to 50%, go into this ginjo from Yoro Shuzo in Ozu, Ehime. The brewery, which was severely affected by flooding in 2018 but continued production with community support, uses regionally characteristic sake rice to produce a graceful, food-friendly ginjo.
