Description
Tsunekigen Ginjonamachozoshu is a ginjo from Kano Shuzo in Ishikawa Prefecture stored using the namachozo method, aging unpasteurized before a single heat treatment at bottling. This approach preserves a lively freshness and enzymatic complexity that bridges raw and matured sake qualities in a ginjo style from Ishikawa's Kaga brewing region.
