Matsuyama Mii rice milled to 60% is the raw material for this tokubetsu junmai, brewed by a family operation without a hired toji using Ishizuchi Mountain spring water in Ehime. The tokubetsu designation reflects a stricter polishing standard than standard junmai, adding grain clarity to the cup.
