Junmai from Suehiro Shuzo in Aizu Wakamatsu, Fukushima, brewed to the brewery's foundational three-rule standard: natural Aizu water, hereditary Aizu toji craft, and rice grown in the same watershed as the brewing water. Founded in 1850, Suehiro ferments in small 30-koku tanks, producing softly flavored, food-friendly sake. Specific rice variety and polishing ratio are not publicly disclosed.
