Description

Shikaiou Junmai Ginjo Nakakumi Hatiku from Fukui Syuzo in Toyohashi, Aichi, uses rice polished to 50% with deep underground spring water from the Tenryu River basin in a small-kiln production philosophy that prioritizes quality over volume. Founded around 1912 and now in its fourth generation, this Aichi brewery's Shikaiou (King of the Four Seas) brand delivers the concentrated, hand-crafted depth that only deliberately small-scale production can achieve.
