Yamada Nishiki polished to 40% is the foundation of this tobiniri (drip-collected) daiginjo from Fukui Syuzo in Toyohashi, Aichi, limited to 200 bottles per year. It won the Gold Medal at the International Wine Challenge (IWC) SAKE division, expressing a clean, concentrated flavor with refined depth and a smooth finish.
