Shizensaibai Mai Jikomi Junmai Daiginjo Imayo Tsukasa is brewed by Imayo Tsukasa Shuzo in Niigata City using naturally cultivated rice grown without pesticides or chemical fertilizers, reflecting a commitment to clean, minimal-intervention agriculture. The rice is polished to the daiginjo level of 50% or below, and the sake is brewed entirely from rice without added distilled alcohol, producing a pure, expressive junmai daiginjo. The naturally grown rice contributes a clean, focused flavor with a subtle depth rooted in the health of the soil.
