Yamada Nishiki and Shizuku Hime, both polished to 50%, are used in this tokubetsu junmai from Nakashiro Honke Shuzo in western Ehime Prefecture. Shizuku Hime is a relatively new Ehime-developed brewing rice prized for producing mellow, gentle sake, complementing the classic Yamada Nishiki base.
