Nama (unpasteurized) honjozo made from Hida Homare polished to 60%, released as a seasonal raw sake that preserves the freshness and lively character of the new pressing. The Hida Homare rice contributes solid umami, while the cold-season bottling without heat treatment keeps aromatics bright and the texture lively. Kaba Shuzo, founded in 1704, produces this under the long-established Shiramayumi brand.
